A process of producing bioethanol from sugar cane juice filtered by alcoholic fermentation with Saccharomyces cerevisiae. Proper treatment to sugar cane juice gave establishing initial conditions of pH, ° Brix and glucose concentration. Later to make yeast fermentation in the bioreactor was activated. The amount of reducing sugars was determined from a standard, amount of yeast curve over time and finally ethanol quantitation was performed by the method using potassium dichromate standard curve of known concentrations of ethanol.
