EL BIEN COMER EN HUESCA: BOSQUEJO DE UNA HISTORIA DE LA GASTRONOMÍA CONTEMPORÁNEA EN EL ALTO ARAGÓN1

RESUMEN.— Este artículo pretende ser un esbozo de una historia de la gastronomíacontemporánea en Huesca a partir, principalmente, de noticias en prensay archivos, sobre todo por la existencia en el Histórico Provincial de una colecciónpoco frecuente de minutas de banquetes, de las que también hay algunas en el Municipal,en la Biblioteca Pública y en colecciones oscenses. Para los autores —chefsy empresarios— contemporáneos y sus restaurantes la información proviene deconversaciones personales recientes.ABSTRACT.— This article proposes to be an outline of the history of the contemporarygastronomy in Huesca, mainly based on newspaper articles and archives,above all due to the fact of the existence of a rare collection of banquet menus inthe Provincial Historical Archive, as well as in the Municipal Historical Archive, in the Public Library and in collections belonging to Huesca. For contemporaryauthors, chefs and businessmen, and their restaurants the information comes fromrecent personal conversations.
